Barbequed Potatoes with Leeks

This potato dish is great and can be changed easily by changing the spice or substituting the leeks for thinly sliced onions.  If you are going to a barbeque they’re great as you can cook them in the oven if the ‘que is full as well they can be prepared the day before.  We like to set up a couple of these before we go camping and just take them along.

 

Ingredients

Potatoes; however many need

Fresh or roasted garlic

1 bunch leeks sliced thinly

St. Ann’s Jamaican Spice Or

Cypress Hills Steak Spice Or

Jerry Lee’s Cajun Spice 

Directions

Slice potatoes thinly and place in bowl add olive oil and seasoning, St Ann’s Jamaican Spice or Cypress Hills Steak Spice toss add set aside.  Sauté lightly leaks and garlic to soften.  Place the potatoes on tin foil top with the sautéed leaks and garlic and wrap up, it’s best to wrap it on more time and seal the ends bake in oven at 350 degrees or on the barbeque for about 45 minutes, cut open on a plate and serve it in the foil.
