Chicken Skewers with Mango Glaze

This is a simple great marinade,  it takes about 30 minutes to prepare and cook.  Sweet and spicy and is great or chicken or pork ribs.  If you like the flavours and the heat try using it on a whole chicken either in the smoker or oven be sure to put some of the sauce inside the cavity.

Ingredients

2 pounds chicken breasts or thighs

750mls mangos juice

125mls apricot jam

90mls lime juice

5mls Jerry Lees Cajun Spice

10mls cinnamon

5mls cumin

2 seeded minced jalapeno peppers

20mls minced fresh ginger

Directions

 cut chicken into cubes or strips and place on wooden skewers and refrigerate

add all ingredients except chicken to sauce pan, simmer for 20 minutes then cool.  When marinade iscool add skewered chicken and refrigerate 4 hours.  remove chicken from marinade and cook on Barbeque, or broil a few minutes each side until fully cooked.  While chicken is cooking return the rest of the marinade to a skillet or sauce pan and reduce, you can then either pour the reduced sauce over the cooked chicken or place in bowl as a dip.  If you aren't a real spicy person reduce the amount of cajun spice or omit all together.
