Chorizo Stuffed Chicken Breasts

Ingredients

boneless and skinless chicken breasts

Chorizo mixture
1 – 2 chorizo sausages – split length wise and sliced
1 finely diced green pepper
1 finely diced red pepper
2mls     cumin
5mls     Jerry Lee’s Cajun spice
5mls     garlic

Directions

 Sauté chorizo, peppers and spice until cooked, cool and keep in cooler until needed.  Butterfly chicken, stuff with 25mls of chorizo mixture, pinch closed, place in pan with a bit of liquid; veg stock, verjus or wine and bake 15 - 20 mins in 375 degree oven, when done top with cheddar & mozza or your favorite cheese and broil until browned.

 If you have left over chorizo mixture you can use it for an omelet or if you have cooked rice or potato sauté and serve as a side dish
