Pork Tenderloin Wraps

We like to eat casually at home most days, so eat a lot of “made at the table” hand held food, like wraps, fajitas and such. No this isn’t just because we have teenage boys it’s just casual eating. Wraps are great because they’re fast, simple, tasty and very healthy. When we do our wraps and such at home we always make sure they is very little, if any, added fats. We found out years ago that kids will always eat more if they get to make it them selves after all they filled it therefore they’ll eat it

 
Wraps are also great for outside eating around the barbeque for gatherings and most of it can be prepared ahead of time.

Ingredients

 

1 whole pork tenderloin
Woodford Rib Rub or
Cypress Hills Steak Rub
Tortillas or
Small pita bread
Tzatziki
Tomatoes
Leaf Lettuce

 

Directions

Roll the tenderloin in the spice to coat well and cook on the barbeque, start off hot and sear all sides then finish a bit cooler, we like to serve it medium rare, it does cook quite quickly. If you are going to be cooking indoors then sear in a cast iron skillet with no oil and finish in the oven at 350 degrees. If indoors you may have to cut the tenderloin in half but you can do both in the same pan as long as they are no touching when they go into the oven, if touching you may have an under-cooked spot. When cooked let stand for a bit before thinly slicing.
 
Wrap the tortillas in foil and heat in the oven or barbeque. Wash the tomatoes and lettuce, slice the tomatoes into half moons and split the lettuce leaves. 
 
This is so quick and easy and once again everyone is going to help themselves.
 
While I’m writing this recipe I’ve decided that this is what we are going to have for dinner tonight, so I’m going to post this recipe and head off to the store to get some stuff.
