Seafood Fajitas

Fajitas are great for family gatherings. You can easily adjust the amount of ingredients for the number of people to feed or the amount of spice. The fajita rule of thumb is 4 to 6 ounces of meat per person and 4 tortillas; the rest of the volume is up to you. The recipe below should feed 3 or more people. Fajitas are a very healthy choice for your family as all the ingredients are fresh and should be cooked with very little oil. For a healthy choice with this dish, try to buy fresh, local seafood.

Ingredients

Mixed seafood: shrimp or prawns, scallops, your local favourite fish

1 green pepper julienned – sliced into strips
1 red pepper julienned
½  onion sliced into strips
10 mls (2tsp) Jerry Lee’s Cajun Spice – you can always add more if you like it really hot
5mls (1tsp) cumin
                   
½ lime
1 package small flour tortillas
125mls salsa
125mls sour cream
125mls guacamole
250mls shredded cheddar – you can mix with other cheese
2 fresh jalapeño peppers sliced

 

Directions

Sauté the seafood in a non-stick skillet with as little oil as possible, it will depend on the chorizo sausage some are much drier then others. Sauté until just done and remove from pan but retain the oil. Add the veg when hot and then add the Cajun spice and cumin, stir and sauté until the veg is just soft but with a bit of crispness.  Place on large serving plate with the seafood on top squeeze a ½ lime on top and serve immediately. Not spicy enough for you? Then add more Cajun spice or perhaps throw in a couple of sliced jalapeño peppers.
Warm both sides of the tortillas in a skillet, place in foil and keep warm in oven until service.
Place, sour cream, salsa, guacamole, sliced jalapeño peppers and the shredded cheese in dishes, set it all in the middle of the table and let everyone help themselves
If you’ve got little ones make a separate batch of veg without so much spice.  Make sure you do add some spice and sooner than you know they’ll want to have the regular heat.  Maybe add some of their favourite vegetables as well. The kids will have fun “making their own dinner”.
