Spicy Mango Barbeque Sauce
This is a slight variation of the chiken skewers with mango glaze. Follow the recipe but reduce is a bit longer and brush onto your ribs or serve it as a side sauce for the table
Ingredients
750mls mango juice
125 apricot jam
90mls lime juice
5mls Cajun spice
10mls cinnamon
5mls cumin
2 minced jalapenos
20mls minced fresh ginger
Directions
place all ingredients in a sauce pan or skillet and simmer to reduce until desired thickness. If you're a bit of a light weight and can't handle the heat reduce the cajun spice or omit it alltogether. If you reduce it too much add a bit of water or mango juice to thin it out.
