Sundried Tomato Vinegarette

 a quick healthy alternative to store bought dressings. We use this one on our Seared Tuna and Beet salad, the recipe is posted here under salads

Ingredients

250mls olive oil

80mls balsamic vinegar

80mls sundried tomatoes, reconstituted

10mls honey

10mls dijon mustard

1 clove garlic

5mls fresh thyme

1 pinch sea salt

1 pinch fresh ground pepper

Directions

 combine all ingredients except the olive oil in food processor, when well pureed slowly addd the olive oil to thicken and emulsify the oil
