Texicana Nights
We went to Texicana, and found this incredible recipe and just what a night of tequila shooting can do.
This a great dinner party dish, the chicken can be stuffed and refrigerated before the guests arrive. For those of you that like to plan ahead you can individually wrap and freeze the stuffed chicken breasts for a later date.
Ingredients
boneless and skinless chicken breasts
for each chicken breast add
2 slices tomato – halved
1 dollop cream cheese – use spoon once then toss
3 slices fresh jalapeno
1 -2 mls Jerry Lee’s Cajun Spice – depends on the heat you want
Directions
Butterfly chicken, add ingredients in above order, pinch closed – don’t worry if it doesn’t stay closed, place in pan with a bit of liquid; veg stock, verjus or wine and bake 15 - 20 mins in 375 degree oven, when done top with cheddar & mozza or your favorite cheese and broil until browned.
Check to be sure it’s cooked!!!!
