Woodford's Rib Rub
To some showcasing the sauce is what it’s all about, to others it’s the meat and to others still it’s the blend of spices used. To me it’s how the meat and the spices blend together, one not over-powering the other. It’s easy to use too much spice trying for a bolder flavour, but be careful, more is not always better, use a small amount for your first run and work up from there if you want. It’s always best to apply the rub on your ribs the night before and pull the ribs out about an hour prior to cooking. Be sure to remove the “silver skin” on the underside of the rib prior to preparation or ask your butcher to do it for you. If you prefer to braise your ribs prior to barbequing then lay down the rub before you through them on the grill.
As for sauce, if the spice blend is right and you don’t over cook the ribs there is no need for sauce, that’s how I roll. Seriously though if you like your ribs saucy then go for it. At home there is always someone at the table that wants sauce so if your inviting a gang over then through some sauce out and satisfy everyone. Try to match your sauce with the spice blend, for the Woodford’s use a light flavoured sauce, to enable the spices to come through even a sweet barbeque sauce will work.
Back to our celebrity endorsement, we couldn’t afford one of those high priced celebrities we all see endorsing every product imaginable. So we found an affordable local one that was willing to work for room and board. Not every product endorsement requires travel time; our celebrity didn’t even leave his own house. When you live in a two-room house complete with porch and your meals are all prepared and delivered to you why would you leave? Sounds like a teenager. As a matter of fact this guy prefers to live in the “big house” with us because it’s more comfortable. Our dog, Woodford is a lazy two-year-old Black & Tan Coonhound from Oklahoma that we named after a southern bourbon.
